Pan Seared Salmon with Mediterranean Salsa Fresca and Toasted Couscous

Ingredients:

4 salmon fillets, skinned (roughly 1 ¼ – 1 ½ pounds)
Canola oil
1 teaspoon paprika
1 teaspoon granulated garlic
½ teaspoon granulated onion
½ teaspoon ground cumin
½ teaspoon ground coriander
¼ teaspoon salt
¼ teaspoon black pepper
Pinch cayenne pepper
1 teaspoon grated lemon zest
Mediterranean Salsa Fresca (recipe below)
Toasted Couscous (recipe below)

Preparation:

-Place the salmon fillets onto a plate or into a large bowl, and drizzle in about 2 tablespoon of the oil; then, sprinkle in the paprika, the granulated garlic and onion, the cumin, coriander, salt, pepper, cayenne and lemon zest, and toss everything gently to coat the fillets evenly and well; allow the salmon to marinate for at least 20 minutes, or even over night.

-Place a large cast-iron skillet over medium-high heat, and drizzle in about 2-3 tablespoons of the oil; once the oil is hot, add in the salmon fillets, and allow them sear on that first side for about 4 minutes, or until a deep, golden-brown; then, flip over and allow them to cook and sear on the other side for about 4 more minutes; remove from skillet.

-Serve with seared salmon generously topped with the Mediterranean Salsa Fresca, and a side of Toasted Couscous, if desired.

Mediterranean Salsa Fresca Ingredients:

Ingredients:

1 cup small cherry or sugar tomatoes, quartered
1 small persian cucumber, finely diced
¼ yellow bell pepper, finely diced
2 tablespoons pitted kalamata olives, diced
2 tablespoons finely diced red onion
1 teaspoon chopped fresh dill
1 teapsoon chopped flat-leaf parsley
½ teaspoon grated lemon zest
1 teapsoon lemon juice
Salt
Black pepper

Preparation:

-Combine all ingredients up to and including the lemon juice in a small bowl, and add a couple of pinches and salt and pepper; mix with a spoon to combine, and serve immediately, or keep covered and in the fridge until ready to serve.

Toasted Couscous Ingredients:

Ingredients:

1 cup couscous
1 ¼ cup water
Salt
1 tablespoon olive oil
1 clove garlic, pressed through garlic press
1 tablespoon chopped parsley

Preparation:

-Place a medium-small non-stick sauce pan or pot over medium heat, and add in the couscous; toast the couscous, stirring it frequently, for about a minute or so, and then pour it out of the pan/pot; set it aside for a moment.

-Into that same pot or pan add the water, a couple of pinches of salt, the olive oil and the garlic, and stir to combine; bring the water to a vigorous simmer, pour in the couscous and stir, and turn off the heat; cover with a lid, and allow the couscous to soften for about 5-7 minutes; then, fluff with a fork, add the chopped parsley, and toss to combine; serve warm.

I really like routines. I’ve always been a planner, and there has always been at least three different lists in my purse or smart phone since I can remember.

I like structure. Knowing what I’m going to do each day. And I like to stay busy. I really enjoy having something to do – and I usually have to plan days to just BE. You know, the all day watching Netflix kinda days. They usually only happen after I’ve already had a couple hours of keeping busy crossing things off my lists.

Keeping busy usually keeps me going. It will energize me, and I’ll thrive off having a 1000 things to do. At least, I used to think that’s what it did. Now, I think it’s driving me crazy. While in the midst of my career conundrum, I grasped every opportunity within my reach to keep myself busy in the hopes I’d discover what it was I really wanted to do for the rest of my life. Perhaps I’d make some extra money in the process.

Now I think I’ve spread myself too thin, having to think about too many things at once. Some things feel more like chores now, rather than the hobby I once enjoyed. Now that I’m getting closer to making some real career choices, I’m recognizing that I need to cut out these extra activities to make myself feel more whole.

In all of my responsibilities I’ve created for myself, I don’t want to lose track of what is truly important to me. I’ll be making some changes soon, when I make some official decisions about what I want to put on the chopping block.

Pizza is another example of a routine that serves a great purpose. Routines and systems should make life easier.   • 1 1/4 cup whole wheat flour
  • 1/2 teaspoon instant yeast
  • 1/2 cup hot water
  • 1-2 T honey
  • salt
  • 1-2 T EVOO
  • 1/2 cup non-fat Greek yogurt
  • 2 tablespoons tomato sauce
  • 1 tablespoon EVOO
  • 1/4 teaspoon cumin
  • 1/4 teaspoon garlic salt
  • 1/4 teaspoon oregano
  • 1 1/2 cup shredded mozzarella
  • 1 cup sliced mushrooms
  • 1/4 cup olives, chopped
  • 1 handful spinach, chopped
  • 1/2 roma tomato, sliced
  • 4 oz shredded chicken

Instructions

  1. Preheat oven to 425 degrees.
  2. In a large bowl, mix together flour, yeast, and salt.
  3. Swirl honey over the top of flour mixture. Add hot water. Mix together completely with a fork, and form into a ball, either with hands (if not too sticky) or a fork. Let sit for 10 minutes, covered with a towel.
  4. Swirl EVOO over the top of the yeast, and remove from bowl. Spread thinly with hands on a sprayed baking sheet to desired size. Bake in oven for 5 minutes.
  5. Remove crust from oven and set aside.
  6. To make sauce, mix together Greek yogurt, tomato sauce, 1 T EVOO, cumin, garlic salt and oregano. Spread onto crust.
  7. Layer crust with cheese, chicken, and veggies. Cook for additional 12 minutes until cheese begins browning in center of pizza.
  8. Let cool 3-5 minutes before serving.

Tabouli salad or Tabbouleh is a simple salad of very finely chopped vegetables, lots of fresh parsley and bulgur wheat, all tossed with lime juice and olive oil. See the tips below.

Tabouli is likely the topmost famed Mediterranean/Middle Eastern salad there is. Because it is now sold in most large supermarkets around the world, I feel compelled to dispel one thing: the “star of the show,” so to speak, in a tabouli recipe is not the bulgur. The idea is to have a little bulgur with the salad, not a little salad with your bulgur.

Parsley is the true “star of the show”

The true star in a tabouli recipe is the very finely chopped parsley–lots of it.  Parsley holds well against the citrus in the dressing; that’s why tabouli is even better the next day. Some tabouli recipes like this one, call for a few fresh mint leaves and green onions, while others use only parsley and red onions instead. This recipe is closest to the version I grew up with, but feel free to make it your own.

Important tips for this tabouli salad recipe:

1- In this tabouli recipe, I recommend extra fine bulgur. Extra fine bulgur does not need hot water nor too much time to soak before adding it to the salad. If you end up using coarse or extra coarse bulgur, then hot water is recommended and you will need to soak it for 45 minutes or so.

2- To achieve the right tabouli texture, you will need to chop the vegetables as finely as possible. I have been asked before if a food processor can be used here; you can use it to chop the parsley if you wish, but I would advice you to chop the tomatoes, cucumbers and green onions using a sharp knife.

3- Be sure to use firm tomatoes. Once chopped, place the tomatoes in a colander to drain excess juice.

4- This recipe calls for cucumbers; other versions of tabouli do not.  I like to use  English Cucumbers also known as hothouse cucumbers, they are long, thin skinned, and generally seedless. If you choose to use the more common American cucumbers, be sure to remove the skin; cut the cucumber in halves and remove most of the seeds then proceed to chop.

5- No dressing but a splash of fresh lemon or lime juice and quality extra virgin olive oil like our Early Harvest  olive oil. Description

Traditional tabouli salad recipe with parsley, mint, bulgur wheat, finely chopped vegetables and a zesty dressing. Recipe with step-by-step photos.


Ingredients

  • 1/2 cup extra fine bulgur wheat
  • 4 firm Roma tomatoes, very finely chopped
  • 1 English cucumber (hothouse cucumber), very finely chopped
  • 2 bunches parsley, part of the stems removed, washed and well-dried, very finely chopped
  • 12-15 fresh mint leaves, stems removed, washed, well-dried, very finely chopped
  • 4 green onions, white and green parts, very finely chopped
  • Salt
  • 3-4 tbsp lime juice (lemon juice, if you prefer)
  • 3-4 tbsp Early Harvest extra virgin olive oil
  • Romaine lettuce leaves to serve, optional

Instructions

  1. Wash the bulgur wheat and soak it in water for 5-7 minute. Drain very well (squeeze the bulgur wheat by hand to get rid of any excess water). Set aside.
  2. Very finely chop the vegetables, herbs and green onions as indicated above. Be sure to place the tomatoes in a colander to drain excess juice.
  3. Place the chopped vegetables, herbs and green onions in a mixing bowl or dish. Add the bulgur and season with salt. Mix gently.
  4. Now add the the lime juice and olive oil and mix again.
  5. For best results, cover the tabouli and refrigerate for 30 minutes. Transfer to a serving platter. If you like, serve the tabouli with a side of pita and romaine lettuce leaves, which act as wraps or “boats” for the tabouli.
  6. Other appetizers to serve next to tabouli salad:Hummus; Baba Ganoush; or Roasted Red Pepper Hummus

Notes

  • The finer you chop the vegetables, the better. See additional tips above.
  • To serve a smaller crowd, simply cut the recipe in half.
  • You can keep tabouli refrigerated in a tight-lid container for 2 days or so. It’s important to try and drain some of the juice out before refrigerating leftover tabouli.
